The majority of food we consume is in a form that cannot be utilised by the body until it has gone through the process of digestion. Digestion occurs in the stomach and small intestine and is brought about by the action of digestive enzymes. These enzymes are very specific in their action. Proteins are broken down into amino acids by protein digesting enzymes, fats and lipids into free fatty acids by fat digesting enzymes and carbohydrates into simple sugars by carbohydrate digesting enzymes. However, some foods such as fruit, vegetables, grains, seeds and legumes contain a carbohydrate portion which is not able to be digested by the enzymes we produce.
